Dandelion Flower Muffins


2 cups flour
1/2 tsp. salt
1/4 cup oil
4 tbsp. honey
2 tsp. baking powder
1/2 cup dandelion flowers
1-1/2 cups milk
1 egg beaten

  Combine all dry ingredients. In a separate bowl mix together the liquid ingredients and then add the liquid to the dry ingredients and stir just to moisten. The batter should be lumpy. Spoon into an oiled 12-cup muffin tin and bake in a preheated oven (400°) for 20-25 minutes (Nyerges, 1979).
