Growing Potatoes

I decided to try a new way of growing my potatoes this year. This is a good idea esp. if you’re limited on space. Wrap chicken wire around to make a circle, put sticks (or whatever you wish) through sides and into ground to stabalize it. Pack some hay around sides (to keep dirt from falling out) and fill with dirt, layering potatoes and hay(just on sides) as you go. Snip holes randomly throughout the sides for the shoots to grow through, push hay to the side just in hole you cut open.

I was honestly suprised at how good the turnout was this year. I will certainly do it again next season, just add a few more(now that I know it works good).

Dandelion Dip

1/2 cup young dandelion leaves, chopped finely
1/2 cup cottage cheese
1/2 tsp. salt
    dash of pepper
1 tsp. chopped chives or onion
    sesame seeds

  Put dandelion leaves, cottage cheese, salt, pepper, and chopped chives or onion into blender or food processor and blend mixture thoroughly. Chill before serving. Garnish with sesame seeds and serve with crackers or celery (Good, n.d.).

Dandelion Casserole

1 lb. ground beef
1 can (16 oz.) whole tomatoes
1 clove garlic, minced
1 tbsp. parsley, chopped
1/2 tsp. oregano
1/2 tsp. basil
    salt and pepper to taste
2 cups fresh dandelion greens, cleaned

  Brown the beef and drain. Add tomatoes and seasonings. Simmer for a few minutes and place in a casserole dish and bake at 350° for 30 minutes. Meanwhile, boil the dandelions, drain, and chop them into small pieces. After casserole has baked for 30 minutes, add the chopped dandelions and stir. Return casserole to oven for an additional 15 minutes.

Homemade greenhouse

This is one way to use old windows, make a little greenhouse! My husband slowly replaced some windows in our house, so we decided to use the left over windows, and a few other random ones, to build a little greenhouse. The windows on top have a hinge on it so it can open, the windows on sides slide open, and other one cranks open. It worked great! I ended up putting some shelving inside and flowers around it, with little walkway. Made it look like little house.
